The beautiful Miss Toni Louise tweeted me this afternoon.  This was exciting, not many people do.  But what was even better was that I could help her 🙂

What did T need?  A good apple pie filling.  And don’t I have a cracker!

Buttered Apples – Adapted from Stephanie Alexander

4 apples, peeled, cored and chopped (not too small) – Granny Smith or Pink Ladies are the best
About a Tbsp butter, maybe a bit more if you are using big apples
1 tsp vanilla bean paste (or vanilla extract)
1/2 a cinnamon stick (this tastes better, but for convenience you can use powdered cinnamon)
About a Tbsp brown sugar

Melt butter, sugar and paste in a wide saucepan – heavy-based is better, but any will do – add cinnamon

Place apples in the pan and simmer uncovered for about 5min

Turn once, being careful not to mush up the apples too much, and ensuring they’re coated in the buttery caramely sauce

Cook for another 5 min or so, then remove from heat.  Remove cinnamon stick.

Serve either on its own with ice cream, baked in a pie (with ice cream) or baked with a crumble topping (you guessed it – with ice cream!).  Try putting crushed hazelnuts and coconut in the crumble topping – so delicious!

It makes your house smell divine too!
